Why is lemon juice made with artificial flavor?

    Seriously? This can't be true.
          Well it depends on the brand you buy.
  

       A lot are made from concentrate and diluted with additives, chemicals and add natural flavors.

"As with almost any types of juices derived from plants, lemon juice is actually mostly water. The next most important ingredient is citric acid, which comprises about 5 percent of the volume and gives lemon juice its characteristic tartness. Next is malic acid (approximately 7 percent of the total acid composition), ascorbic acid (vitamin C, used to prevent scurvy), and finally trace amounts of tartaric acid, fumaric acid, and several others. Lemon juice also contains minor amounts of glucose and other sugars.
Bottled lemon juice, often reconstituted from concentrate, contains all of the above ingredients but also has a few chemical preservatives added to help it maintain color and freshness because it is usually stored for long periods of time and may be shipped for long distances.        Even the National Consumers League (NCL) has been urging the US Food and Drug Administration (FDA) to come down on the lemon juice producers for allegedly falsifying label's of 100% lemon juice that have been obviously diluted.

    For example:

  • NautraLemon 100% lemon juice from concentrate - natural strength only contained about 35% lemon juice
  • Lira 100% lemon juice from concentrate contained about 25% lemon juice 
  • Lemon Time lemon juice from concentrate contained only 15% lemon juice
  • Pampa lemon juice from concentrate contained only 10% lemon juice 


     But Wait!! Before you start blowing lots of money on "pure" lemon juice you can always make your own. You don't need much; your hands, a bowl and some lemons. And in case that still sounds to hard i found a very user friendly video.
